Join us on a food and wine pairing journey through the wilderness of Western Australia.
Chef Simon Le Bon draws his inspiration from native and seasonal produce, using wild honey
from West Australian wildflowers woven through his plant-based dishes.
The food is paired with boutique wines chosen for their natural processes and use of wild cultivated yeasts.
